Taking a sample



Foods such as pudding or jelly need to be mixed thoroughly in order to ensure a more unified sample. Apply the sample onto the prism surface with a spoon.

Measuring Method

Brix in Puddings and Jellies can be measured with MA871 Digital Refractometer described here.

The MA871 is an optical instrument that employs the measurement of refractive index to determine the % Brix of sugar in aqueous solutions.


When measuring pudding or jelly repeated measurements may not be stable due to insoluble ingredients in the sample. If the unit is showing unstable readings, calculate the average of several measurements.
